Keens, New York City
Keens Steakhouse is a Manhattan institution and a benchmark for steakhouses across the country. Open since 1885, its antique furnishings and dark wood paneling give the space a timeless warmth. The quality of beef is routinely excellent. This is the kind of storied culinary tradition you can’t manufacture anywhere else.
Order: USDA Prime T-Bone Steak, creamed spinach, hash browns, martinis with blue cheese olives
Cote, New York City
Cote is the only Michelin-starred Korean barbecue restaurant in the U.S. This dark and moody Flatiron District hotspot is full of buzzy energy and the sizzle of meats grilling at every table. Their meticulous steaks need only the barest accompaniment, but a dazzling array of banchan and a 1,000+ bottle wine list do the job neatly.
Order: The Butcher’s Feast — four cuts of USDA Prime and American Wagyu Beef with Korean accompaniments
Klaw, Miami, FL
This elegant restaurant on Biscayne Bay might be the best destination for Surf and Turf in the country. Start your meal at Klaw, with grilled giant prawns and local ceviche before perusing a detailed steak menu. All their cuts are dry-aged in house, and we think the Japanese A5 is worth the splurge here.
Order: A5 Kobe Striploin, “The Golden Sweet Potato”, honey-harissa carrots
Halls Chophouse, Charleston, SC
The first Halls Chophouse opened in Charleston in 2009 and there are now five locations across South Carolina and Tennessee. They serve only USDA Prime steaks from Allen Brothers in Chicago that are dry- or wet-aged in house. In true Southern style, the sides may even be better than the mains.
Order: 16oz wet-aged ribeye, sweet and sour collard greens, shrimp & grits skillet
Prime + Proper, Detroit, MI
Prime + Proper is a monument to contemporary grandeur. Its striking black and white color scheme is accented with brass, glass, and stone. The seating is plush and the entrees are sumptuous. Take a close look at the “Rare Cuts” section on the menu, offering curiosities like whiskey-aged ribeyes.
Order: Dry-aged bone-in New York strip, cauliflower gratin, wood-fired broccolini
Asador Bastian, Chicago, IL
Asador Bastian is a love letter to the power and simplicity of Basque-style open flame cooking. Start with pintxos and vermouth, like you would in San Sebastian. The starring cut here is a chuletón, a gigantic bone-in rib chop, offered from multiple different breeds of cattle.
Order: Dry-aged Holstein chuletón, tallow-fried potatoes, piquillo peppers
Jeffrey’s, Austin TX
It takes a special restaurant to be noticed for steaks in Texas. Jeffrey’s first opened in 1975 and it remains upscale and posh while still being warm and inviting. It specializes in wood-fired dry-aged steaks and French-inspired sides. The wine list is one of the deepest in Texas and the servers take great care in selecting the ultimate pairing.
Order: Black Angus Texas Ribeye, béarnaise sauce, crispy Brussels sprouts
Knife, Dallas, TX
If there were an award for best modernist steakhouse in the country, we’d give it to Knife. The decor is sharp, and the flavors are wide-ranging. You’re equally at home ordering a Caesar salad as you are crudo and cacio e pepe. The steaks run the gamut from old-school flights to an astonishing 240-day dry-aged ribeye.
Order: Bacon tasting board, 44 Farms skirt steak, wild mushrooms in bordelaise
Guard and Grace, Denver, CO
Guard and Grace in downtown Denver highlights its wood-fired grill at every turn. Small plates feature grilled octopus in a white bean salad and grilled carrots cooled down by an herb yogurt. They feature Creekstone Farms Angus beef from Kansas, Snake River American Wagyu, and grass-fed beef from local Colorado farms. You can even order a flight of filets to taste the difference between the three.
Order: Filet flight, black truffle mac and cheese, oak-fired carrots
Charro Steak & del Ray, Tucson, AZ
One of the newest outposts from Tucson’s most storied restaurant family, Charro Steak & del Ray, captures the taste of the Southwest. The steaks are 100% grass-fed and mesquite grilled in the Sonoran style. Start with prickly pear albondigas and then order the gamut of Mexican-inspired sides.
Order: 22-day aged smoked ancho rub prime rib, chile verde mashed potatoes, esquites con crema
Niku Steakhouse, San Francisco, CA
Niku imagines the classic American steakhouse through the lens of Japanese precision. Its cheffy flourishes are sure to delight and the small plates change with the seasons. The dry-aging program here turns out stunning cuts of beef. The locally sourced and foraged accompaniments reflect the NoCal region.
